2025 Mildnat Pinot Noir Pétillant Naturel

Pinot Noir from Church Rd in Waipara. Clone 10/5 planted on their own roots in 1992 and are currently in conversion with BioGro.

Gently direct pressed, fermented in a mixture of stainless steel and neutral oak for one year. Bottled with the addition of 2026 fermenting juice to 16g/L residual sugar before fermenting dry to wonderful balance and poise.

Clean and pure, acid driven, smashable.

Unfined and unfiltered. Minimal added sulphites.
